The Risotto's piemontese tradition

Ingredients for 6 people:
Gr.500 of riso; gr.80 of  butter; gr.60 di grated parmisan; lt. 1 of meat stock as needed


Put the rice in one liter of boiling stock, mixing time to time, for 15 minutes. Let it rest for 5 minutes more in a warm place well covered. Before serving add the butter and the grated parmisan in the quantity you like. 


Note: in the right season of the year you vcan enrich your risotto with mushrooms and white truffle.

Rice salad

Ingredients for 4 people:
Gr.400 of rice; 1 little onion; 2 "heart"of white celery; 1 yellow big pepper; olives in the quantity you like; 2 ripe tomatos; a little bit of parsley; oil; lemon; salt and pepper as needed.


Put the rice boiling togheter with the onion. Kepp out of the fire when still not completely cooked, leave ie become colder, kepp out the onion. Mix the rice with the cutted vegetables and the olives, add oil, salt and pepper, as needed, and finally decortate with the parsley.
